Bacon Wrapped Corn
Although the calendar is shifting toward fall, the temperatures don’t quite feel that way yet. And the summer corn that was wonderfully sweet two months ago is merely corn now. But there’s a way to salvage the season with bacon coming to the rescue.
I preheated the pellet grill to 375 degrees and wrapped bacon around fresh corn on the cob. After securing with a toothpick, I sprinkled the outside with some Cajun seasoning. In the 20 minutes it takes the bacon to crisp up, it is bathing the corn in flavor, eliminating the need for butter or salt.
I served it with a “last of the garden” salad and it was perfect. Give this easy recipe a try and you’ll be snatching up corn on the cob to serve it over and over!
