The Easter meal has come and gone but perhaps you are still looking for ways to redo the leftovers. Welcome to Ham Salad and this isn’t the pureed ham salad of our younger days. This is chunky and more like chicken salad. In fact, use the same recipe! I chopped the leftover ham, then added salt, pepper, pickle relish, a dash of Dijon mustard and just enough mayonnaise to hold it all together. It is delicious and was the perfect outdoor patio lunch on this warm spring day.
