Giant Oatmeal Dried Cherry Cookies
Yield: 8 large cookies
1 stick (1/2 cup) unsalted butter, softened
1 egg
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
1 tablespoon molasses or sorghum syrup
1-1/2 cups old fashioned (rolled) oats
3/4 cup all-purpose flour
2 teaspoons cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup dried cherries
1/2 cup dark chocolate chips
1/2 cup chopped pecans or walnuts
Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper and set aside.
In the bowl of an electric mixer, cream the butter, egg, brown sugar, granulated sugar and molasses at medium speed for 2 minutes. Meanwhile, stir together the oats, flour, cornstarch, cinnamon, baking soda and salt in a medium bowl.
Add to the butter mixture and stir until well blended. Fold in the cherries, chocolate chips and nuts. With a 1/3 cup measure, scoop the dough and roll into balls with your hands. Place 4 cookies on each baking sheet. Bake only one sheet at a time for 15 minutes. Remove from the oven and press down lightly with a spatula. Return to the oven for 3-4 minutes. Carefully transfer to a wire rack to cool completely. Repeat with the remaining cookies. Store in an airtight container.
This recipe was given to me by my friend Laura. It is not overly sweet but delicious with morning coffee. You will love them!
