Marshmallow Sauce

I love the flavor of marshmallows. While many have been plopping them into hot chocolate or topping mashed sweet potatoes, I like making marshmallow sauce. It is the perfect garnish for toasted slices of angel food cake, brownies, or drizzled over fruit pizza. This recipe is easy and fast but most of all delicious!

Marshmallow Sauce

Yield: Almost 2 cups

3/4 cup sugar

1/4 cup milk

2 1/2 tablespoons unsalted butter

1 tablespoon honey or corn syrup

8 ounces miniature marshmallows

1/2 teaspoon pure almond extract

Place the sugar, milk, butter and honey in a medium saucepan over low heat. As soon as the butter melts and the sugar dissolves, increase the heat to medium high and bring to a boil. Reduce heat to low, stir constantly and simmer 4 minutes. Remove from heat and stir in the marshmallows. When completely dissolved, add the extract, stirring well. Use immediately.
