Simple Chocolate Pie

In my continuing quest to use items from my pantry and freezer, I found a frozen graham cracker pie crust that begged to be used. So I pulled out some dark baking chocolate and a can of sweetened condensed milk to honor that request. This is an old recipe that I discovered decades ago in a notebook that belonged to my Grandmother. I have used it over and over again simply because it has just the right amount of sweetness. I really don’t like cloyingly sweet desserts and sometimes pie can fall into that category. This one is perfectly balanced and with just a drizzle of chocolate syrup, it’s an exceptional meal-ender.

Simple Chocolate Pie

Yield: 8 servings

1 (8-ounce) package cream cheese, softened 
1 (14-ounce) can sweetened condensed milk
6 ounces dark or semi-sweet baking chocolate, melted and cooled slightly
2 eggs
1-1/2 teaspoons pure vanilla extract
1 graham cracker crust
Chocolate syrup for garnish

Preheat the oven to 350 degrees. In a mixing bowl, beat the cream cheese at medium speed of an electric mixer until creamy. Add the condensed milk and mix well. Stir in the chocolate, then add the eggs and extract, blending well. Transfer to the crust and bake for 30 minutes. Cool completely on a wire rack before cutting, garnishing and serving.
