Country Ham Spread

By now, you’ve been the guest in many homes and are probably tired of the typical party food.  You know what I mean … veggie platters with Ranch dip, cocktail smokies in the slow cooker, cheese and crackers and the occasional meatball. So why not shake things up a bit with country ham. While it’s a delight with Red-Eye Gravy during the breakfast meal, it certainly isn’t limited to that time of the day. I had some “scraps” that were leftover from a brunch and decided to add some zip and zing to a block of cream cheese. The result is a not-so-ordinary addiction that is perfect on low salt crackers such as Crunchmaster.

 Country Ham Spread

1 pound country ham, cooked and trimmed
1 (8-ounce) package cream cheese, softened
1 heaping tablespoon sour cream
1 heaping tablespoon stoneground mustard
1 teaspoon dried parsley (or 1 tablespoon minced fresh)
1 cup chopped toasted pecans, divided

Place the ham in a food processor and finely chop. Add to a mixing bowl along with the cream cheese, sour cream, mustard, parsley and 1/ 2 cup of the pecans. Mix well and transfer to a serving container.  Cover and refrigerate at least 2 hours. Remove from the refrigerator 30 minutes before serving. Garnish with the remaining pecans and accompany with low salt crackers.
