My bologna has a second name, it’s Y-U-M-M-Y!
OK, so maybe my jingle-writing hero (Barry Manilow) would not appreciate my change of his tune, but it’s true. And when you try it for yourself, you’ll agree. For all of you meat lovers out there looking for a different kind of appetizer to serve during tailgating or football watch parties, I’ve got your option. It’s ridiculously inexpensive and easy. You simply need a bit of time, some crackers and a knife. Oh, and a nice, ice-cold beer goes with this perfectly!
Smoked Bologna
Yield: 4-6 appetizer servings
1 (12-ounce) log bologna
1/4 cup barbecue sauce of your choice
Make a few slits in the bologna with a serrated knife. Place in a zip-top bag and add the barbecue sauce. Close the bag and shake to make sure the sauce covers the meat completely. Allow to marinate at room temperature at least 30 minutes. Preheat the smoker to 225 degrees and place the marinated bologna on the grate. Smoke for 2 hours. Remove and let rest for 5 minutes. Slice and serve warm with crackers and more sauce for dipping if desired.
