Slow Cooker Tomato Sauce

Slow Cooker Tomato Sauce

Yield: 8 servings

2 onions, peeled and chopped
2 bell peppers, seeded and chopped (I used sweet red)
8 garlic cloves, peeled and minced
1 tablespoon sugar
1 tablespoon red wine vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper
12-15 ripe tomatoes (or as many as your slow cooker will hold), peeled and chopped

Place all ingredients in the slow cooker and turn on high for 2 hours. Reduce to low and continue to cook for 6 -8 hours. If desired, purée with an immersion blender. Serve warm or cool completely and freeze for later use.
