Ribs

RIBS – just the word makes many groan with delight or with the burden of responsibility. It requires dedication, commitment, and time … lots and lots of time.  But honestly, who has that much leisure to give to a food that will be gone in 20 minutes with the first bite?  Not me, so I decided to give myself a gift and go simple.  The result was absolutely insanely delicious. It all began at the supermarket where I noticed that racks of ribs were on sale for a mere $5. I could not pass it up and grabbed a couple. Now I wish I had bought more and will return today.  The beauty of the recipe below is that it will be finished quickly and you can fit it to any taste buds that are around the table. Since the ribs are NOT brushed with sauce on the grill, I set up a sauce bar that ranged from sweet to heat. It allowed each to give their ribs the proper bath and was a big hit. So as the last bit of summer comes into view, give it a try yourself and enjoy the extra time you’ll have to be with your family and friends.

Super Simple Ribs

Yield: 4-5 servings  

2 racks baby back ribs
2 tablespoons salt, divided (I used Kosher)
1 tablespoon black pepper, divided
Barbecue sauce of your choice

Remove the membrane from the back side of the ribs and rub each rack with half the salt and pepper. Let rest 30 minutes at room temperature. Preheat your grill on low heat (225 degrees – I have a grill thermometer to make sure it maintains the proper temperaure). Cook with the meat side up for 2 hours. (Leave it alone and allow the grill to work for you!) Flip the ribs and cook for one more hour. Wrap in foil and let rest for 15 minutes, then slice and serve with the barbecue sauce of your choice.
