Decades ago when I first went to Calhoun’s restaurant, I fell in love with their side dish of Spinach Maria. This is a lighter version that I created to go with the foods we crave during the hot summer months. And just like Calhoun’s, it goes well with barbecue, but also with fish, chicken and pork from the grill. Give it a try as a zesty side dish!
Tammy’s Spinach Maria
Yield: 4 servings
1 tablespoon olive oil
3 (6-ounce) bags baby spinach
1/2 heaping teaspoon crushed red pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons grated Parmesan cheese
Place the oil in a large skillet over medium-high heat. Add the spinach and stir frequently as it wilts. Cook 5 minutes and add the crushed red pepper, salt and pepper. Stir well to blend and transfer to a lightly greased shallow 1-quart casserole dish. Let rest while the oven preheats to 350 degrees. Sprinkle with the cheese and transfer to the oven. Bake 7 minutes or until bubbly. Serve warm.
